NUTRITION: Making The Most Of Leftovers — Frittata-be-kidding me!

See, I told you there would still be posts about food!  Who am I kidding?  I love to cook and I love to talk about cooking.  You know what else I love?  Re-using leftovers.  You know what I hate?  Waste.  Especially with food that I prepared.  Solution? Frittatas!

YOU:  What, Cyndi?  Are you serious?  Frittata-be-kidding-me?!?! 

ME:  Nope.  

One of my favorite things to do these days is to make frittatas out of leftovers found in the fridge.  Brussels sprouts with ground beef? Delicious.  Spinach with sausage? Love it.  Pulled pork with anything?  Yum.

Here’s what you need:  leftovers (meat and veg or just meat or just veg), 6 eggs, coconut milk, and a cast iron pan.

And … after 15 minutes or so? Well, take a look for yourself ….

Delicious!  I cut the frittata into 4 pieces and put them in individual containers.  Result? A a delicious lunch for 4 days – just reheat and serve!  When I’m feeling really ambitious, I make two pans (yes, I have 2 cast iron pans) and have 8 delicious meals for the upcoming week.  It is SO EASY and SO DELICIOUS!

Well?  What are you still doing here?!?  Get in the kitchen and get cooking!
